How do I set Office 2003 as my default for all of my Office files? - office 2003 antiactivation

I have Office 2003 Pro, full version. I have a new laptop with Vista and Office 2007 trial version. How do I save my files in 2003 instead of 2007, what happens is still open. I tried right-clicking and "Open with .." 2007 and remains open.
